A comforting French Onion Soup recipe, perfect for chilly weather, featuring caramelized onions simmered in rich beef stock, topped with toasted bread and Gruyère cheese.
Cut your onions against the grain then add to your pot with your melted butter over medium heat. Stir periodically until your onions caramelize adding a small splash of water here and there if they start to burn or stick. This whole process can take 45 minutes to a hour, maybe more. Add your brandy and allow it to cook for around a minute and then add your beef stock, herbs, Worcestershire sauce, salt, and pepper. Simmer for 20 minutes then remove the bay leaves and stems. Add to an oven safe bowl, cover with your toasty bread, and cheese. Broil until golden brown.
