Start by oiling up your cleaned potatoes then add flaky salt. Bake at 400°F (200°C) until a knife will pierce the potato with no resistance. Slice your onions with the grain and add to a pan over medium heat with 1 Tbsp butter and 1 Tbsp olive oil. Allow those to cook until a deep brown. You can add a splash of water along the way if they start to stick. At the end, add your Worcestershire sauce, salt, and pepper. Now, cut your potatoes in half and scoop the insides into a bowl. Add 1 Tbsp butter, your caramelized onions, heavy cream, egg yolks, half of your cheese, salt, and pepper. Mix thoroughly and then top your potato skins with the mixture. Add the rest of your cheese to the top and bake at 400°F (200°C) until golden brown. Top with chives and serve.
