This is the first step in creating a living colony of yeast and bacteria, a sourdough starter, which will be used to make bread rise and give it a delicious, slightly fermented taste.
On day 1, take the container you are going to grow your starter in and weigh it in grams. Record the weight. Now add 100 grams of Rye flour and 150 grams of filtered, room temp water to the container. Stir this mixture together until well combined. Loosely cover the container, ensuring there isn't a tight seal so that gas can escape. You are now done for the day. It is suggested to feed this starter around the same time every day, starting tomorrow.
