Garlic confit is an incredible little accoutrement to have on hand. Slow frying the garlic gives a great sweetness to the garlic and makes it super spreadable. This recipe details an easy way to make it using an oven.
Add peeled garlic to an oven-safe dish. Add enough oil (EVOO or a neutral oil) to cover the garlic. Optionally, add any herbs of your choice. Place the dish in an oven preheated to 250F for about 2-2.5 hours. Once cooked, store the garlic confit in a jar, submerged in its oil, on the counter for about a week. If stored in the fridge, the olive oil will solidify; simply remove it from the fridge for about 30 minutes to soften before use.
