It's hard to find a delicious meatball sub sandwich, so here's how to make one at home with flavorful meatballs, a simple tomato sauce, and melty cheese.
To make the meatballs, start by grinding 2 pounds of chuck and add in half a pound Italian sausage. Add to a bowl with 2 eggs, 1 cup of bread crumbs soaked in milk, salt, pepper, 1 teaspoon oregano, and about half a cup FRESH grated Parmigiano Reggiano. Mix to combine and then roll into balls of your desired size. Place them into the freezer for about 10 minutes to firm up a little. For the sauce, mince 2 cloves of garlic and add to a pan with 2 tablespoons olive oil. I then add one 28oz can of crushed tomatoes, and salt and pepper to taste. Heat a separate pan to medium-high and add some high smoke point oil. Brown the meatballs on all sides and then place them into the pan with the sauce. Cover the pan and let the sauce simmer on low until the meatballs are cooked through. To assemble the sub, open your desired shape or size bread and lay down some sauce, followed by your meatballs. Add more sauce if desired. Add Parmigiano Reggiano onto the meatballs and then some mozzarella. Place under a broiler until the cheese is melty and starts to brown. Finish with some fresh basil. Enjoy!
