Simple and Delicious Egg Fried Rice

Egg fried rice is so incredibly simple and delicious. Grab your wok and let’s go!
You absolutely have to use day old rice. Fresh rice will clump and mush together. You need to allow the rice to dry out some over night. Make the amount you want the day before according to package directions and put it in the fridge.
The day before, make the amount of rice you want according to package directions and put it in the fridge overnight to allow it to dry out. The next day, prep everything before you start because it will happen fast. Slice 2 cloves of garlic, finely dice 1 shallot, and prepare 1 chili. Put your wok on and get it super hot. Season the wok with a high smoke point oil and then discard the oil. Add fresh oil, then add the garlic, shallot, and chili. Next, add 3 beaten eggs and a handful of green onion. Cook the eggs for about 30 seconds. Add your day-old rice and cook for about a minute. Add MSG and white pepper, then toss around to incorporate everything well. Add about 2 tablespoons of soy sauce onto the pan around the perimeter of the rice. Toss again. Now serve immediately with some more green onions on top. Enjoy!
